Completely random trivia note: did you know that "worm" comes from an Old English word for "dragon"? How it evolved from that to its present meaning is beyond me.

You're going to get dragons! :uhoh:

I made sourdough loaves again - this time, they spread rather than rose. So they're very wide but not deep. I think I might use bread pans next time. :scratch:

Also, I made meringues. A distinct improvement, but they're not there yet. They need to be drier and harder. But at least they're not half-melted.

Your liquid/flour ratio was a little too high on the bread, Jude. We always look at the dough, even in the bread machine, and add a little flour or water, depending on how it looks. Even when we've measured the ingredients exactly, things sometimes need adjusting. That's why bread recipes usually aren't exact about the amount of flour you should add when you're kneading.

Thanks, that's good to know.

The meringues actually improved by being left out overnight - the texture still wasn't perfect, but they were crispier and chewier. I'll keep working on that...

So if you make quickbread and it's slightly underbaked, is it possible to salvage it by rebaking it after it's cooled?

Well, I tried a new meringue recipe, which used icing sugar instead of granulated, 300g for 5 egg whites.

The result was the opposite of what I've acheived so far: they had perfect texture (dry, crunchy exterior with a soft, gooey centre) but I didn't like the flavour so much - they had a powdered-sugar type of taste, almost as if the sugar didn't blend properly with the egg whites. Shouldn't icing sugar blend much more easily?

I'll keep plugging away...

So... used the Oregon starter yet?

I'm going to attempt another Norwich Sourdough Bread again today and tomorrow. It should be interesting because I'm having people over for lunch, so I need to figure out how to juggle all the cooking. Luckily, two of the dishes will be done outside on the grill.

I was looking for recipes for stuff to do with wild plums and came across the following:

Barbeque sauce based on plums! I bought some plums last night and tried it and it seemed very much like barbeque sauce. My nose wasn't working yesterday, so I couldn't get any more than the 5 basic flavors, but my husband said it was good.

We are both nightshade sensitive (tomatoes, potatoes, eggplants) so that's cut a big swath through a lot of our favorite menus. Since plums act much like tomatoes in a recipe, I'm now going to be able to make spaghetti sauce, and pizza sauce, and chili and ketchup and maybe even creole sauce!

I'm quite pleased with this. I guess I'm going to have to buy a bunch of plums and turn them into plum sauce and can them. :)

That's something I've never heard of, Maria.

How do the plums taste compared to tomato, when cooked with sauce ingredients? I imagine they're both sweeter and more tart.

I've just gone through every page in this thread until I hit the last vison post.

(An experience which forced me to snack on any number of goodies - grazing while browsing.)

I'm collecting all her recipes, advice and opinions on teh art of cookery to "epublish" for her friends (and family - I'll send it on).

If anyone has any recipes or advice from vison that don't appear here, can you let me know?
