I thought of answering this question in a brand new thread called "Hey Estel!" but then I thought maybe not :D

Check out this post (with pictures!). But the gist of it is: choose your liqueur, get some vanilla pods, split them open, and scoop out the tiny seeds inside, put the seeds into the bottle with the liqueur, and put the pods in as well since they have some vanilla flavour as well.

Then - wait. It takes time for the vanilla flavour to seep into the liqueur. You won't have homemade extract tomorrow. I'd say give it at least two months. Put the bottle in a dark place and take it out and give it a good shake every couple of days to spread the flavour around.

See the last picture in the post, and look at the bottle at the far right - see how clear it is? That's the one I made with vodka. Now, a year and a half later, it's as dark as any high-quality vanilla extract you see in the shops.

If you want pure unadulterated vanilla flavour, go for the vodka. If you like a mix, you can try rum or brandy. I've tried all, and I like them all so I can't advise you there.

Oh, I forgot to mention sterilize the bottle first with boiling water. More details in the post I linked to.

Also, for what it's worth: the absolutely finest vanilla beans I've come across so far are the Mexican vanilla pods from Arizona Vanilla.

Strangely enough, I just made vanilla extract with my sister-in-law earlier this week.

For what it's worth, we used vodka and Madagascar and Tahitian beans. I liked the smell of the Madagascar ones much better.

Seems like that would taint the flavor of the good vanilla beans...I'd expect most flavored vodkas to use very cheap ingredients.

I agree with Elsha - the whole point of making your own vanilla is to get the pure, unadulterated flavour. Vanilla vodka will probably have its own simulated, probably artificial flavour.

According to the Absolut website, their Vanilia contains only natural ingredients. Tastes like it too!

That's good. I may even try it.

But using it to make vanilla flavour would be like adding vanilla beans to vanilla extract. You'd get more satisfaction by making it from scratch.

I finally got around to making it this past weekend. Forgot to sterilise the bottles, but they were brand new and I did wash them first. Think it'll be ok?

I made one with rum, one with vodka and used madagacar vanilla pods for both. Let you know how it turns out in 8 weeks ;)

Plan out the stuff I'm going to bake to give away as Christmas presents (even though I won't be able to use the vanilla, darn it). Last year I made three different kinds of cakes. This year, I'll probably do cakes again as well, but I'm thinking I might do tins of various kinds of homemade cookies as well. Probably 6-8 different cookies. Now I just need to figure out what kinds.

It's my favourite time of year for baking. Having the stove on for hours at a time just leaves the kitchen cozy instead of meltingly hot, plus I get to experiment with all sorts of lovely goodies. Just have to remember to make the frostings and whipped cream type stuff first this year. Last year made them last, and the kitchen was so warm after days of baking, that my frostings melted off the sides of the cakes, and my whipped cream concoctions collapsed.

Just checked out that instructional post in the cookery guild, Jude. Daaaaayam, I gotta try that! :drool: Never used to like vanilla (except in ice-cream) but the flavour and scent have inexplicably grown on me in about the last 6 months or so.

Right, now to buy some vanilla pods and find me some jars... :banana:

And await news of Estel's final result of course! :poke:

The vanilla turned out lovely, but I couldn't bring it with me from Gib when we moved, so it was gifted to a friend. She liked it too :)
