I'm thinking of getting one. A guy at work gave me a bag of dried beef chunks for my dogs that he said he made at a fraction of the price you would pay for for a comparable bag of treats from the pet shop.

And then I also thought of doing my own dried fruit - home-made dried apricots, raisins, and such-like. And at the end of summer, I could dry all the herbs left on the plants outside. I'm sure a dried basil leaf would keep a lot more flavour than those dried crushed leaves you get from the shops.

Why did you stop using yours?

I've got a food dehydrator, too. We hardly ever use it, though. It's just not a priority for me and there's only so much time in a day. The next time we have a bunch of beef, I plan on putting some up as jerky. My husband loves that stuff.

I did dry a bunch of jerky for the dogs once, but I didn't get it dry enough and it eventually molded. The dogs ate it anyway, though. :help:

I dried a bunch of oregano in mine this summer. I needed to buy some and I was overrun with the fresh stuff outside, so I thought "why not?" It turned out fine, but I have to say it was a quite a bother, between washing all the tiny herbs and then crumbling them after the dehydrator. It takes a lot of fresh herbs to make just a little bit of dried.
And it was no more flavorful than the oregano you buy in a shop.

I've done other things, too, mostly fruits and vegetables. I can't seem to get the tomatoes right, though. They end up hard and crispy. I assume I've been cutting them too thin.

As far as basil, I just freeze it in ice cube trays with a little water. But I'm less likely to want just a pinch of it and I don't use it as often as oregano.

I've read that microwave is good for drying herbs. Has anyone tried it?

Oh! This looks like the recipe thread!

I bought a dehydrator last year, and while I haven't used it quite as much as I expected, it is very good. It's great for making healthy snacks - veggie chips or dried fruit - and I have used it for herbs, but they're trickier as small pieces fall through the racks. I haven't tried to make jerky yet, but I want to, as it's so expensive to buy. I haven't tried microwave-drying herbs either.

From memory, the subject of potatoes comes up when Sam boasts of his homemade fish and chips. I love a good fish-and-chips whenever I visit the UK, but I've never attempted to make them myself.

I don't have the books handy, but doesn't the subject come up when Sam laments that he doesn't have any potatoes handy for his stew? So there's another angle.

Yep, stews and fish-and-chips will definitely be included, but I'm looking for more. Kind of a showcase of what potatoes can do.

Here's one I haven't made yet, but it looks good. It's from Cook's Illustrated Magazine, and they've never led me astray yet.

Here's an unusual one!

Tater Cookies

1 pound butter
1 cup sugar
1 tsp. vanilla
3 1/2 cups flour
2 cups crushed potato chips (about 5 ounces)
1/2 cup chopped pecans

Cream butter and sugar, add vanilla and stir in flour. Add potato chips and nuts. Drop by teaspoon onto a greased cookie sheet. They do not spread much, you can put them fairly close together. Bake at 350 degrees for 15 minutes. These keep very well and are surprisingly like shortbread.

There's several other possibles from this site: https://lotrscrapbook.bookloaf.net/other/recipes.html

There's some kind of potato candy out there. Maybe it's Polish? It's good, but I don't have a recipe for it.

I make potato cakes for St. Patrick's Day. And I love roasted red potatoes. I cut them into chunks, put them in a bowl with a lid or a ziploc bag, add olive oil and spices (rosemary, salt, parsley, paprika, tarragon, garlic powder, etc.), mix, spread into a baking dish or on a sheet, and bake, usually at a higher temp (400?). Stir them once or twice and cook till they're tender and as crispy as you want them.

My grandma made absolutely best potato latkes. As far as we know, it was just potatoes, eggs, salt and pepper. Nothing we've tried ever compared.

I don't even try anymore. I just make latkes with sweet potatoes, or zucchini, or something fancy like that.

Mmm, latkes. I've never been able to make good ones.

I'll have to have a look for the potato sweets. I've an idea I've heard of them, but I'll have to see if the technique and other ingredients are plausible for the Shire.

Those cookies sound interesting indeed! For authenticity, I think I will make my own plain potato chips (this is what a dehydrator is for!), since Sam should be able to do that in a slow oven. Although authenticity is still a bit tenuous, because potato chips would have to be common for people to start turning them into other things.

Thank you! These are going in the list! Good thing it's autumn here, because I may not have enough potatoes stored in the cellar. :)

I normally parboil the potatoes and slice a little thicker.

Sounds delectable. It's as if someone sat down and designed a recipe guaranteed to be banned in every conceivable healthy diet. :D
