I need to remember to take photos of stuff. I contributed some homemade hot cross buns to morning tea after Mass today, and they were quite popular.

Edit: Glancing back through this thread, apparently it's been a whole year since I tried to write that fanfic about potatoes, and all I've done is noted down the recipes. :roll: :blackeye:

Food picture in hope of tempting people to an Australia moot! ;)

Today I baked mixed fruit muffins. The loaves are the same mix, but I couldn't be bothered waiting for the muffin trays to come out of the oven (or greasing them when I ran out of patty pans), so I think they're called muffin loaves.

The fruit was from various bottlings - the last jar or half-jar of a batch usually doesn't seal, so those go into the fridge instead of the cellar. One jar was papaya and kiwifruit, one was apple and pear, and one was banana pie filling.

Most of the muffins will go into the freezer for morning teas at church or for when guests come over. (Hint, hint! :) )

I just discovered how to use the sous-vide to make poached eggs. The traditional way is fraught with dangers of ending up with messy diluted eggstuff. I've got maybe a 70% success rate of doing it the traditional way. But when I tried the sous-vide way yesterday, it seemed foolproof, and the eggs had perfect edges.

Just preheat the water to 75 degrees celsius, and gently lower the eggs in, shells and all. Let them cook for 13 minutes. Let them cool for three minutes, then carefully open enough of the top of the egg shell to be able to pour them out onto the plate or the toast you're serving them on.

Warning: the eggs were very hot to handle when working on opening the egg shell. Next time, I'm going to cool them in a bowl f cold water for the three minutes and see if that helps.

Is that poached or soft-boiled? Not that it's a crucial distinction as long as it's tasty.

That's a good question. The way to find the answer would be to cook a soft-boiled egg, then open up the top of the shell and see if it retains its shape as perfectly as the poached version does when you pour it out.

I think you'd need to quick-cool to be able to peel off the shell without damaging the egg, but I have been able to de-shell soft-boiled eggs in perfect shape.

Also, 13 minutes seems like a long time. Is it because the water is below boiling?

I don't know. I just got the method from the internet, and the one time I tried it the results were perfect (apart from the egg being too hot to comfortably handle after three minutes of cooling).

It was still good but like she said, it tends to be dried out and tough when you reheat it that way. Not sure I would have the patience to try her method though. I usually reheat pizza with just about 5 minutes at 350.
